This is a simple recipe that's tasty and nutritious

Ingredients - Serves 4 - 360 calories
2 boneless, skinless, chicken breasts
3 large carrots
1/4 head of red cabbage
2 cloves of garlic
1 small onion
3/4 cup of brown rice
12 oz can of coconut milk
4 ounces white wine
4 tablespoons soy sauce
1 teaspoon grated ginger
3 cups water

Cut chicken into cubes. Dice carrots. Slice cabbage and oninons. Put entire mixture into covered pot. Add liquid. Bring to a boil and simmer until the rice is tender, approximately 45 minutes.Cooking time can be shortened by using parboiled brown rice. Stir well before serving. Add additional soy sauce and ginger to taste.
