Now that the chilll of fall is here, here's a favorite breakfast that easy and quck to prepare providing a nutritious way to start the day. Buckwhat is gluten free, so it's a great choice for people with coeliac disease or gluten allergies. It can help lower cholesterol by preventing its absorption. The grain contains rutin, a compound that strengthens capillary walls, which is helpful for lessening possible hemorrhaging in people with high blood pressure. It also contains D-chiro-inositol, which is deficient in people with Type II diabetes |

Buckwheat is rich in protein, iron, zinc and selenium. The grain was brought to the US by Polish, Russian and Jewish immigrants who called it kasha. It's usually found in the kosher section of most large grocery stores and is avaialble in large medium and fine granulation. Medium is a good balance between mouth feel and cooking time. Woff's makes the most popular brand. Tradtionally this recipe calls for butter, but Smart Balance is a healthier subtitute and tastes great. Ingredients serves 4 - Calories 170 2 cups of water Put buckwheat in a frying pan over low heat. Stir in an egg, heating to coat the kasha grains. When the water boils, stir in the buckwheat. Cook over slow heat until the water is absorbed. Add small amounts of salt and Smart Balance to taste. Buckwheat also makes a good side dish for dinner instead of rice. To add flavor, chop up some shitake mushrooms to the water. Broth, consomme, or bullion may also be used instead of water. |
